I’ll be honest — I was never the salad person. You know the type who orders a side salad at every meal and genuinely enjoys it? That wasn’t me. I’d look at a plate of leafy greens and think, nice try. But somewhere along the way, life started teaching me some hard lessons about what it really means to take care of your body.

Like many of us, I grew up knowing leafy greens were “good for you” — but knowing something and truly understanding it are very different things. It wasn’t until both of my parents were diagnosed with cancer in later stages of their lives that health stopped being an abstract concept for me.
